Apple Snacking Cake {plant based/vegan friendly}
Are you stuck for a delicious dessert idea that will please everyone? Including your vegan family and friends, or anyone who’s simply not eating eggs or dairy? That’s what I needed this past week, while helping my vegan daughter and son-in-law move into their new condo. Because, let’s face it, there’s nothing quite like the smell of something yummy baking in the oven to make a new place feel like home. I came across a great recipe on Pinterest. With some tweaking and additions, I created my own version. We all loved it! And if you don’t need it to be vegan, just use regular milk and butter. Same delicious…

Anti Inflammatory Mango Breakfast Smoothie (vegan friendly)
I’ve been indulging a lot these last few months…hopping around from one delicious destination to another. The thing is, a big part of the reason that I enjoy travelling so much is because it offers the opportunity to discover and sample new cultures and their foods! And I love doing it without thinking too much about whether they are good for me or not. No guilt! But who are we kidding, I’m no spring chicken (I’m OK with that, I’ve made my peace with it). At some point the body starts sending me reminders…I am so not OK with that! LOL Thankfully some small changes usually do the trick to…

Almonds + Cherries Breakfast Smoothie {vegan friendly}
It’s a smoothie kinda morning… It was supposed to be a walk/run training day kinda morning also, but surprise surprise it’s raining…again! And unfortunately, I’m not that motivated. Truth. I am so ready for some sunshine at this point, aren’t you? This wet and dull weather has me day dreaming about where to escape to next. But in the meantime here’s the recipe for another favourite smoothie of mine that I think you will really enjoy. Almonds and cherries with a hint of coconut and chocolate…yes it’s as yummy as it sounds! Now if you really want to make this extra good-for-ya, you can add a small handful of…

Family Favourites: Apple Pie Scones
I absolutely love scones! I bake them often, although probably not often enough if you were to ask the family. They’re so darn easy to make, the flavour combinations are endless and best of all they turn out great. My kinda baking! Simple and delicious, they are a great addition to your breakfast or brunch table. Also, they pair perfectly with my afternoon coffee…or tea…or whatever you might be drinking… These apple pie inspired ones are the current favourites. Make some today! Bonus tip *apparently buttermilk makes a great substitution for the heavy cream (thanks for the tip Juliana) I haven’t personally tried it, but I have tasted the results, as…

Instant Pot Steel Cut Oats for a Fast + Healthy Breakfast
A big thanks to Richard for getting me to rediscover steel cut oats for breakfast! I had not prepared them in a long long time. Why? Because they take a good 40 min to prepare from start to finish. Not exactly a quick breakfast, especially when you wake up hungry! Also, the pot gets this foamy, sticky stuff on it that rather bothered me…so off the menu they went. But, no surprise here…Instant Pot to the rescue. Once again! It still takes a good 30 minutes to cook the oats, however it’s the one step deal that’s so great…throw your ingredients in the pot, set the timer and forget about…
