Instant Pot Lemon Shrimp Orzo
Been dreaming of Greece all week long thanks to a Facebook feed that won’t stop teasing me with photo memories! I was there this time last year and I thank my lucky stars that I was able to take part in such a wonderful trip before the covid craziness started. We saw a lot, the weather was outstanding and we ate so well every day. Greek food is delicious! It’s strange because it seems like it all happened yesterday and yet it also feels like a lifetime ago. So much has changed in such a short time… To keep those memories alive and kicking, I have been topping everything I…

What’s the best Instant Pot recipe you’ve tried so far? Instant Pot Tuscan Chicken Pasta With Mushroom + Sun Dried Tomato
One pot cooking is the reason so many of us are loving our Instant Pots. Today’s recipe is the perfect example of how to pull that off. Creamy pasta with chicken, mushrooms and sun dried tomatoes….yes please! It’s the kind of recipe that is perfectly suited for pressure cooking actually, so I was pretty confident the results would be good. She had come across the recipe on Pinterest, but we couldn’t pinpoint the exact one she used.…

How To Make Delicious Mushroom + Spinach Risotto In The Instant Pot
To those of you that have been raving to me about the wonders of making risotto in the Instant Pot, I say… OMG you were so right! Thank you, thank you! Honestly, I wasn’t totally sold on the idea of making this somewhat tedious and finicky dish in the IP. I’m not an expert of course, but I have had the pleasure of eating some pretty darn delicious risottos. And, by the way, if you order it at a restaurant in Italy they will tell you straight off that it’s going to be a long wait. Because a good one takes time…add the broth, stir…add a bit more broth, stir…more…

Instant Pot Italian Meat Sauce
Can you make a good Italian meat sauce in the Instant Pot? It’s something I was very curious about trying… In my kitchen a good meat sauce needs to simmer on the stove for several hours, or even better all day. So it goes without saying that the idea of it being ready to serve in under an hour was very appaling, and yet very appealing. Most days we just don’t have a lot of time to spend on cooking. So this is exactly the kind of time saver I was hoping for when I purchased the Instant Pot. My goal here was to use my usual meat sauce recipe…
