Lemon Rosemary Chicken Soup in the Instant Pot
If you are in the habit of searching for dinner inspiration on Pinterest like me, then I dare say that you’ve probably come across a Lemon Rosemary Chicken Soup recipe.
And even if you haven’t, read on…
There are a few different versions out there, with chicken, no chicken…noodles, orzo, rice… other veggies….you get the point.
But, when it comes right down to it, this is just a basic chicken noodle soup recipe that’s been taken up a notch.
It’s nothing fancy really, but it sure is delicious.
The soup gets a serious flavour boost with the addition of some fresh rosemary sprigs and freshly squeezed lemon juice.
Sounds easy.
It is.
Especially when you make it in the Instant Pot!
Since I only cook soups in my IP these days, I thought it was time to offer you my version of this popular recipe, which I adapted for pressure cooking.
So here you go, a great soup dish to get you through the chilly days that are still lingering, as we eagerly await the warmth of summer to arrive.

Lemon Rosemary Chicken Soup in the Instant Pot
Heat oil on SAUTE, add chicken + onion, cook 1 minute, then stir in rest of vegetables, lemon zest, herbs, wine, cook 1 minute more.
Stir in broth, lock on lid and pressure cook 10 min.
Release pressure, open and stir in orzo pasta. Close and pressure cook 5 more minutes. Natural pressure release 10 minutes.
Open and stir in spinach and lemon juice. Close and let rest until ready to serve.
Ladle into bowls, garnish with freshly grated parmesan cheese and enjoy!

Lemon Rosemary Chicken Soup in the Instant Pot
Ingredients
- 2 tbsp olive oil
- 1 chicken breast, skinless, boneless cubed
- 1 large onion diced
- dash salt +pepper
- 1 large carrot peeled +diced
- 1 red pepper diced
- 1 medium potato peeled + cubed
- 3 large cloves garlic minced
- 1/3 cup white wine
- 1 tsp dried Italian seasoning
- zest of 1 lemon
- 5 cups chicken or vegetable broth
- 2 sprigs fresh rosemary
- 2 bay leaves
- 1/2 cup orzo pasta noodles
- handful fresh spinach leaves
- juice of 1/2 a lemon
- grated parmesan for garnish
Instructions
- Press SAUTE button on Instant Pot, add olive oil to pot and heat until screen reads HOT.Add chicken and onion, season with salt and pepper, and cook for 1 minute.
- Add carrot, red pepper, potato, garlic and Italian seasonings, stir well then splash with wine, stir and cook 1 minute more.Press CANCEL.
- Stir in chicken broth and lemon zest.Add rosemary sprigs and bay leaves.(if you don't mind the rosemary sprigs in your soup then just add them directly to the pot, otherwise you can make a bouquet garni sachet by wrapping the sprigs and bay leaves up in a piece of cheesecloth and then submerging it into the broth, then you can easily remove the sachet when soup is cooked).
- Lock on lid and turn pressure valve on lid to SEALING.Press PRESSURE COOK and adjust timer to 10 minutes.
- When time is up press CANCEL, then do a quick pressure release by carefully turning pressure valve on lid to VENTING. Once all pressure is released and pressure pin is in down position, open lid and stir in the orzo pasta.
- Lock on lid again and turn pressure valve back to SEALING.Press PRESSURE COOK button and adjust timer to 5 minutes.When time is up allow timer to count up 10 more minutes for natural pressure release.
- Press CANCEL, release any remaining pressure by carefully turning pressure valve on lid to VENTING.Open lid, remove bouquet garni sachet if you made one (or remove bay leaves and stems of rosemary) and stir in spinach leaves and lemon juice.Close lid and let sit until ready to serve soup.
- When ready to serve, ladle into bowls and top with a generous serving of freshly grated parmesan cheese and enjoy..
