How To Make Pulled Pork For Sandwiches in the Instant Pot
Work days have been long and trying these last few weeks…
The weather has not been kind to us! We’ve had to bear the brunt of snow storms, freezing polar vortex temperatures, crazy strong winds, countless delays and many displaced and disgruntled customers….and sadly one of our collegues passed away while on shift.
So last saturday’s potluck, to celebrate Chinese New Year and Valentines day was a most welcome distraction, that I dare say…we all desperately needed.
I love potlucks!
They’re great because the mish mash of food that comes together is the furthest thing from a normal, healthy meal! And that is a break from the ordinary that we can all use once in a while. Also, you never know what interesting creations people will surprise you with.
Some of these have become requested favourites!…Alison’s Schwartze potatoes (is that really what the recipe is called?) and Maria’s boozy rum cake…both sooooo delish!! Along with many others! (don’t worry I’m on it, I will try to get them to reveal their secret recipes and share them here…stay tuned)
Today however, I’m sharing the recipe for pulled pork.
We all enjoyed Carol’s version at the potluck. It was inspired from a recipe on the Instant Pot App, simplified by using store bought bbq sauce instead of making the one on the recipe.
In my adaptation, I substituted the cumin with smoked paprika and used onion powder in the rub, instead of sauteing onions in the pot. I wanted a one pot prep deal!
This is an easy, no brainer recipe that comes together quickly and is perfect for a get together. Keep it in the pot so it stays warm, and let your guest help themselves to create their own perfect sandwich.
Potluck Pulled Pork Sandwiches

Potluck Pulled Pork Sandwiches { instant pot }
Ingredients
- 2 tbsp Brown Sugar
- 2 tsps Chili Powder
- 1 tbsp Smoked Paprika
- 1 tsp Onion Powder
- 1 tsp each Salt + Pepper
- 2 cloves Garlic minced
- 1/4 cup BBQ sauce of your choice
- 1 cup water
- 3-4 lbs Pork shoulder cut in half
- 1/2 cup BBQ sauce of your choice
- Coleslaw
- Sandwich buns or small slider buns
Instructions
- Add the sugar, chili powder, paprika, onion powder, salt, pepper, garlic, bbq sauce and water to the instant pot and whisk together until well combined.Add pork and roll it around the mixture to coat well.
- Lock on lid, turn pressure valve on lid to sealing.Press pressure cook and set timer for 60 minutes.
- Let pot run on natural pressure release for 20 minutes. Press cancel and release any remaining pressure by turning pressure valve to venting.Open lid transfer pork to a plate.
- Press saute on the pot, add 1/2 cup bbq sauce, stir and let cook while you shred the meat with two forks (taking care to remove fatty pieces).
Return shredded pork to the pot and toss together with sauce. Cook 5 minutes more. - Press cancel, close lid and let rest until ready to serve.Serve on sandwich buns, with your fave coleslaw for topping, or even shredded cheese.

Those look quite tasty! I never think of putting cole slaw on my sandwiches but I bet it gives a really nice crunch.
