Instant Pot Lemon Shrimp Orzo
Been dreaming of Greece all week long thanks to a Facebook feed that won’t stop teasing me with photo memories! I was there this time last year and I thank my lucky stars that I was able to take part in such a wonderful trip before the covid craziness started. We saw a lot, the weather was outstanding and we ate so well every day. Greek food is delicious! It’s strange because it seems like it all happened yesterday and yet it also feels like a lifetime ago. So much has changed in such a short time… To keep those memories alive and kicking, I have been topping everything I…

Lemon + Thyme Instant Pot Chicken
Today I’m sharing a favourite family recipe that I’ve recently revamped for the Instant Pot. I really love the flavours of this dish. Lemon + thyme are a classic combo with chicken. The best part of this dish is the sauce! It’s not a cream sauce as you might expect, but it’s sooooo yummy! Serve this chicken over pasta or rice, or with a side of mashed potatoes so you have a great excuse to pour more of the sauce over your food. Trust me, you’re gonna wanna! Enjoy…stay safe…stay home! This surreal life we are all living shall pass. LEMON + THYME INSTANT POT CHICKEN

Creamy pasta with chicken, mushrooms and sun dried tomatoes….yes please! It’s the kind of recipe that is perfectly suited for pressure cooking actually, so I was pretty confident the results would be good. She had come across the recipe on Pinterest, but we couldn’t pinpoint the exact one she used.…

How To Make Pulled Pork For Sandwiches in the Instant Pot
Work days have been long and trying these last few weeks… The weather has not been kind to us! We’ve had to bear the brunt of snow storms, freezing polar vortex temperatures, crazy strong winds, countless delays and many displaced and disgruntled customers….and sadly one of our collegues passed away while on shift. So last saturday’s potluck, to celebrate Chinese New Year and Valentines day was a most welcome distraction, that I dare say…we all desperately needed. I love potlucks! They’re great because the mish mash of food that comes together is the furthest thing from a normal, healthy meal! And that is a break from the ordinary that we…
