Memories of Greece Chicken Meatballs
Feta cheese is hip again! With the recent TikTok craze over a baked tomato and feta pasta dish, there seems to be a renewed interest in cooking with this very traditional Greek cheese. And why not, I mean it’s fantastic on so much more than just a Greek salad. Of course, now folks out there are putting it on everything! LOL Including meatballs…. Now, I’ve been making meatballs for many years, but I must admit that I never thought of adding feta cheese to the mix. Well, I had to try it. And I absolutely loved the results. So today I’m sharing with you my go to, tried and true chicken…

Instant Pot Chicken + Lime Soup with Rice
Time for a delicious new recipe…. And it’s just gotta be soup! This cold snap we’ve been enduring, along with its generous dumping of the beautiful but dreaded white stuff has me craving comfort food. No Surprise. When the weather is screeching winter at me and I’d rather stay in bed, soup is the one dish that I don’t mind making the effort for. This one is fantastic. It’s actually a meal in a bowl, which right there is a winner in my books. You really don’t need to serve anything else with this. It’s got enough going on that it will leave your belly feeling happy and satisfied. And…

Instant Pot Tuscan Chicken Pasta With Mushroom + Sun Dried Tomato
One pot cooking is the reason so many of us are loving our Instant Pots. Today’s recipe is the perfect example of how to pull that off. Our colleague and friend Christina suggested this one and I have to tell you that as soon as she started describing it I knew it was a recipe I absolutely had to try. Creamy pasta with chicken, mushrooms and sun dried tomatoes….yes please! It’s the kind of recipe that is perfectly suited for pressure cooking actually, so I was pretty confident the results would be good. She had come across the recipe on Pinterest, but we couldn’t pinpoint the exact one she used.…

Instant Pot Garlic Chicken with Herbes de Provence
Here you go… Today I’m sharing this really great recipe for a delicious chicken that some of us were lucky enough to taste recently, from our friend Carol. It came from an official Instant Pot cookbook, purchased at Costco. And considering the success of this recipe it might just be worth purchasing. After all there are 99 more recipes in there that I’m now very curious about. Just a heads up on this meal, there’s a quite a bit of garlic and a lot of herbes de provence in the recipe. Please don’t get scared, like my daughter did when she saw all that garlic on the cutting board. 😜…

Instant Pot Chicken Marsala
Chicken Marsala is a winner in the Instant Pot. Yes, this deliciously saucy Italian inspired dish is actually pretty easy to make the traditional way, on the stove top. So you might be wondering why I would bother preparing it in a pressure cooker. Well, the reason is simple, I love my Instant Pot! Also, taking recipes I cook often and converting them to be prepared in the IP is what I do for fun. LOL In this case, myy go-to stovetop recipe was very easy to adapt, and it worked out beautifully. If you don’t have Marsala wine on hand you can also substitute it with sherry or sweet…
