Pistachio + Banana + Coconut Breakfast Smoothie
Ingredients
- 1/4 cup shelled pistachios
- 2 tbsp unsweetened coconut flakes
- 1 tsp cocoa nibs
- 1/3 cup plain (or vanilla or coconut flavour) Greek yogurt both diary and non dairy versions work well
- 1 tbsp maple syrup
- 1 frozen banana peeled and quartered
- 3/4 cup coconut water
Instructions
- Add pistachios, coconut and cocoa nibs to smoothie blender and pulse until it all turns to powder.
- Add remaining ingredients and blend until smooth.
- Pour into glass, add a straw and enjoy.

I want to be, I have goals….but truth be told, it’s still a work in progress.
It’s just that they’re such an easy way to get some healthy food in you fast that it really is a worthwhile effort to include them in your breakfast repertoire.
I’m always looking for new and exciting flavour combos to experiment with.
Today’s smoothie blends together pistachios, banana and coconut. The end result is a light tasting, slightly nutty drink that is both delicious and good for you.

You should incorporate a variety of nuts into your diet daily, and pistachios in particular are chock full of beneficial properties.
They are rich in healthy protein and omega 3 fatty acids, and they deliver several antioxidants, vitamin B6 and phosphorus.
Plus they are a good source of insoluble fibre and good for gut health.
I think I could use more pistachios in my life!
