Bulgur is a beautiful ancient grain that deserves way more attention than it gets, at least in my kitchen.

It’s a staple food in Turkish, middle eastern and Indian cooking.


And, you might be familiar with it if you’ve ever eaten a salad called Tabbouleh, which has become quite popular, and more readily available premade in supermarkets.

This mildly nutty tasting grain is a whole grain and is surprisingly good for you, not to mention very versatile and fast cooking.

What is Bulgur and why should I eat it?

Bulgur is a whole grain of wheat. That means that you get to eat the entire groat or berry of wheat, rather than just parts of it. 

And, that’s a good thing because each part contains its own health benefits. For example the coating is rich in fibre and the germ is high in healthy fats. 

Bulgur is also low in fat, and provides a good amount of dietary fibre.

It contains healthy minerals like iron, manganese and magnesium, and is considered to be a good source of plant based protein.

Sounds like a food you should be adding to your cooking right?!

You can also use it as a substitute for rice or quinoa. 

I must admit that I had only every used bulgur in salads, and had no idea  how versatile it actually is, until recently.

A quick scan on Pinterest opened my eyes to lots of other uses, such as using bulgur in soups, as a breakfast porridge and even in bread making.

Bulgur is sold parboiled, which means it has been partially cooked prior to packaging, making it easier and faster to prepare.

The grain is available in is 4 different grind sizes: fine, medium coarse and very coarse, so you can choose the one that suits your recipe best. 

I think we can all agree that it’s time to start cooking with bulgur!

How to cook Bulgur in the Instant Pot

 Add all ingredients to the Instant Pot, stir, close lid, set pressure and timer

When time is up release all pressure, open lid and fluff grains with a fork.

Use as needed in your recipes

How to cook Bulgur in the Instant Pot

Equipment

  • Instant Pot or other pressure cooker

Ingredients

  • 1 1/2 cups water (or use 1 cup water + 1/2 cup vegetable or chicken broth for savoury dishes like salads, etc)
  • pinch of salt
  • 1 cup bulgur fine, medium or coarse depending on your use

Instructions

  • Add all ingredients to Instant Pot and give them a stir.
  • Close lid and turn pressure valve on lid to SEALING.
  • Press PRESSURE COOK button then adjust pressure to LOW.
    Set timer for 12 minutes.
  • Once time is up, carefully turn pressure valve on lid to VENTING to release all pressure.
    Open lid and fluff the bulgur with a fork.
    Use as desired or refrigerate up to a week.

*makes about 2 1/2 cups of cooked bulgur
