Greek Quinoa Salad

Ingredients

  • 3 cups cooked Quinoa
  • 3 cups grape tomatoes sliced in half
  • 1 cucumber diced
  • 3/4 cup Kalamata olives
  • 1/4-1/2 cup diced red onion optional
  • 1/4-1/2 cup crumbled Feta cheese (try the Vegan Feta if you eat plant based/vegan)
  • Greek salad dressing ( make your own by whisking together 1/4 cup olive oil + 1 tsp balsamic vinegar + 2 tbsp lemon juice + 1 minced garlic clove + 1 1/2 tsp dried oregano + salt and pepper )

Instructions

  • Add quinoa to a large salad bowl.
  • Top with tomatoes, cucumber, olives and onion.
  • Sprinkle salad with Feta cheese and drizzle with salad dressing.
    Serve and enjoy.
