Add all ingredients (except mint and optional prosecco) to a pitcher, give it a stir, cover and place in the fridge for 1 hour.
When ready to serve, fill 4 large glasses with ice, pour sangria with some of the fruit in each glass and garnish with a sprig of mint.
If you need to stretch this to serve more people, or you want to add bubbles to your sangria, then top up your drinks with some Prosecco, club soda or 7UP
